I’ve been wanting to try overnight steel-cut oats in my slow cooker for years now, just have never got around to actually doing it. Our go to breakfast most mornings consist of some sort of egg sandwich, which we absolutely love. However, I decided it was time to switch it up a bit and try something new, healthy and satisfying. To my surprise steal cut oats actually pack quite a punch of protien into them which will help keep you fuller longer. Which in turn, will keep your litte fingers out of the communal donut box at work.

This recipe is so flexiable and you can find so many different versions of steel-cut oats on the interweb depending on what you like. You definitely don’t have to use pumpkin but I decided I did not get my fill of pumpkin themed items this past fall šŸ˜‰

Have fun with your toppings (i.e, fruit, yogurt, peanut butter, honey, walnuts, etc). If you’re like me, you will find it hard not to dump everything in your kitchen cabinet on top of this heaping bowl of deliciousness.

Overnight Pumpkin Apple Steel-Cut Oats:

(approx. 6 (1 cup) servings)

Ingredients:

1 1/4 cup steel cut oats

1 apple, skin on and cubed 

1/4 cup maple syrup

4 1/4 cup almond or soy milk (unsweetened) 

1 cup pumpkin puree

3 tbsp almond butter

1 tsp vanilla extract

1/4 tsp sea salt

1 tsp cinnamon

1/2 tsp nutmeg

small sprinkle of raisins and chopped nuts for topping

Directions:

  1. Retrieve slow cooker (crockpot) from you kitchen cabinet. 
  2. Place all ingredients into slow cooker except for your toppings (ie. raisins and nuts or whatever your desired toppings may be).
  3. Stir to combine.
  4. Cook on LOW for 5 hours. 
  5. Serve warm and top with your favorite toppings. We used chopped almonds and raisins. Other ideas for toppings include but are not limited to a dollop of greek yogurt, splash of almond milk, drizzle of honey or maple syrup, a tbsp of almond or peanut butter, walnuts and fresh fruit. Get creative šŸ˜‰
  6. If you are feeling ambitious, divide into 6 tupperware containers for easy on the go breakfast every morning.
